Melt the butter in a medium-heat pan.
Blend all your ingredients.
Spoon the mixture onto the pan and fry for two minutes either side.
Serve with lots of berries. Fresh is ideal, but frozen blueberries do make life even easier.
Any leftover pancake mix (wow, willpower!) will keep for up to three days in the fridge, so it’s perfect for fast midweek breakfasts.
